Lasagna Soup



Ingredients

1/2 pound of pasta
1 tablespoon oil
12-16 ounces ground Italian Sausage
1 onion
2 cloves garlic
1/2 – 3/4 teaspoon red pepper flake
2 teaspoons oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried basil or 1/2 tablespoon fresh basil
4 cups chicken broth/stock
1- 28 oz can fire roasted diced tomatoes
2 heaping tablespoons tomato paste
1/2 cup cottage or ricotta cheese
1/2 cup freshly shredded parmesan cheese
2 and 1/2 cups mozzarella cheese
