1 teaspoon red pepper flakes
Dry Rub:
2 tablespoons kosher salt
2 tablespoons chili powder
2 tablespoons smoked paprika
1 tablespoon ground black pepper
1 tablespoon dry mustard
1 tablespoon light brown sugar
1 tablespoon ground cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground allspice
1 slab spareribs (about 3.5 pounds) or 5 pounds beef short ribs, rinsed, cleaned and patted dry
