Ingredients

1 sweet potato
2-3 TBSP olive oil
1 clove garlic
1/2 cup quinoa
1 cup vegetable stock
1/2 tsp. coriander powder
1/2 tsp. cumin powder
1/4 cup fresh cilantro
1/2 cup pistachios, roasted/salted/shelled
Salt, pepper, and cayenne to taste
