Ingredients

1 1/2 cups warm water
1 tablespoon granulated sugar
2 1/4 teaspoons (1 packet) active dry yeast
4 1/2 cups Gold Medal unbleached all-purpose flour
4 tablespoons unsalted butter
2 teaspoons salt
1 bunch broccoli
2 tablespoons olive oil
salt and pepper
10 cups water
2/3 cup baking soda
2 cups shredded sharp cheddar cheese
1 1/2 cups chopped deli ham
1 large egg yolk mixed with 1 tablespoon water
kosher or pretzel salt for topping calzones
